Mexican Stuffed Shells

These are so good! Everyone loved them and he left overs went fast the next day!

I forgot to take a picture so I will have to get one next time make it which i have a feeling will be soon. I made this with my imitation red lobster biscuits which I will post later.

I adapted my recipe from The Way to His Heart.

Mexican Stuffed Shells

 Ingredients:
1 lb. ground beef
1 package Taco seasoning
4 oz. cream cheese
24-32 jumbo pasta shells***
1.5 cup salsa
1 cup taco sauce
2 cups Mexican blend cheese
3 green onions (optional)
Sour cream

***The original recipe calls out 14-16 but I had a lot of meat left over after that and more room in my pan so i made more.

Preheat oven to 350°.

In a frying pan cook ground beef; add taco seasoning and prepare according to package directions (or back of can).  Add cream cheese, cover and simmer until cheese is melted stirring occasionally until well blended. Set aside and cool completely.

While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.

Pour salsa on bottom of 9×13 baking dish.  Stuff each shell with the meat mixture. Place shells in 9×13 pan open side up. Cover shells with taco sauce.  Cover with foil and bake for 30 minutes.

After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed.  Top with any condiments with green onions if wanted.

Serve with Sour Cream.

Wedding Nerves

Im getting married tomorrow! I cant believe that, the last year went by way to fast! Im scared and nervous and excited. Everyone keeps telling me not to be nervous or scared and i cant help it. Its my anxiety anytime i do anything even semi permenent it happens. Plus i want people to have fun tomorrow so i want things to go well and people keep making it seem like im forgetting things so i am freaking out trying to figure out what im forgetting. Ugh.
But i am excited i think we did some pretty awesome things. Most of our stuff is homemade like the invites and the programs so i think it will be cool cause we are doing stuff a little bit different. 🙂

Wedding App

So we did what I though was a neat thing and got an App along with out wedding website. I think it’s awesome but it makes me sad because no one used it at all.

What I love about it is that people can upload photos and send me messages if they need to know something.

Other than that wedding planning is going well the RSVP’s are rolling in which is good but I think this week or next I will have to start calling people who haven’t responded yet since today was the day we wanted them back and I’m not sure we have even received half. Oh well it comes with planning a wedding.

 

 

 

 

 

Ugh Money

I hate that what I can do for my wedding is defined by how much money we can save. Which lets be honest J and I suck at saving money, which means it is our own fault that we are in this position but at the same time it sucks because we have so many good ideas that we can’t do because of money. We had originally thought about doing like a crowd source thing but it’d be embarrassing plus we didn’t know where we would post it so we didn’t look like jerks. I’m sure some of you reading this are like you should have saved better and we tried and for awhile we did but with all the bills we pay we don’t have a whole ton of money left over and we need to buy groceries so we saved what we could and got a good chuck of stuff paid for but now it’s crunch time and it’s like oh crap we are short well basically barely cutting it. I suppose you could blame our honeymoon on that too, but that’s what we wanted was a nice honeymoon because otherwise we won’t ever do one. And that we got paid for as we saved for it. ?It’s just the fact that all our big expenses are due at once so we can’t afford the little things, it sucks but I guess what can you do? we will do our best at the most important thing is that we are getting married.

Time of year, Age, or something in the air?

I’m not sure what it is but man there has been a lot of weddings lately and there are only more to come, including my own! What sucks about that is, it means I need to plan my wedding around others because I don’t want to “copy” any one or have the same dress or first dance song or anything. It kinda sucks. Plus then when I hear what other people are thinking of doing I don’t know if I should change what I was thinking of to not be similar to their wedding even if it’s after mine. I’m sure your reading this and thinking to yourself who cares it’s your wedding and that’s just it I care. I want my wedding to be remebered and not be similar to others. Which is one reason there are some details I’m not letting people know, like our first dance song.
Everything else however I will keep you updated on. Like recently we booked our honeymoon! I am so excited we are going to Antigua so it will be nice and tropical and awesome! We plan on doing scuba diving and boating and all sorts of fun outdoor honeymoony stuff! But before that we have to get through the wedding. Which means we still need to locate a florist, bakery, and I need to find a place for hair and makeup. Otherwise we have everything lined up just need to meet with our photographer and our minister. Things are going well. Although I should probably finish my save the dates and get to work ordering the paper for my invitation… I decided to hand make them. We will see how that goes. I’ll keep you updated. 🙂

Wednesday Wanderings – 10/3

First of all I am never trusting auto post again. But since it didn’t auto post it means I can update it, to the stuff that has happened today.

So this last week not to much has happened. My fiance’s long time on again off again friend came to visit. It’s the first time I got to meet  him but it was very nice to be able to see them catch up and have fun together they both really enjoyed it.

I also went and stayed a night at my parents place. Mainly because the day before I went and saw my best guy friend who is still in college so I don’t get to see him very often. We had a lot of fun! He showed me some Kerbal Space program stuff and some other steam games. And we went to lunch and a bike ride. We got to talk a lot and just chill It was awesome.

The next day I got to spend it with my dad, and we got to talk and bike and it was awesome. I miss my family a lot sometimes. Since I moved I don’t see them much, actually I guess I didn’t see them much before either, but it feels different now cause I’m further away. Don’t get me wrong I really like it here and I love living with Justin and the pug. Sometime it would just be nice to be able to visit for just a few hours and come back but with  the drive a few hours doesn’t seem right. I don’t know maybe I am just crazy.

Anyway my new news for today is: the pug is sick 😦 She has to get her uterus removed and be spayed. So that is going to happen tomorrow. 😦 I will keep you updated.

Tasty Tuesday – 9/24 – English Muffin Bread and Taco Noodles

Two Recipes again today! I have been a busy bee apparently.

English Muffin Bread

I have always loved English muffin bread so when I found this recipe I was super excited.

This is a recipe on One Good Thing by Jillee.

Recipe:

  • 5 1/2 cups warm water
  • 3 packages yeast or 6 3/4 tsp for those that don’t buy packets like me (1 packet = 2 1/4 tsp)
  • 2 Tablespoons salt
  • 3 Tablespoons sugar
  • 11 cups flour (I used all purpose but you can use bread flour)

Directions:

Mix altogether (you can use a mixer but make sure you have a big bowl, mixing can also be done by hand which is the way I did it)(If not used rapid rise yeast let rise to top of bowl, or for some yeast it says let sit 10 min, I did the latter since that’s what my yeast said), then spoon into well greased loaf pans (full recipe needs 4 loaf pans).  Let rise in pans until dough reaches the top of the pans, and bake in 350 degree oven for 45 minutes or until golden brown. But keep an eye on it as every oven is different. 10 minutes before done, brush with melted butter. Makes 4 loaves. Bread will be moist at first. Allow to COOL COMPLETELY before cutting.

Taco Noodles

Found this Recipe at Canadian Moms Cook.

Ingredients:

  • 1/2 – 3/4 of a 16 oz. bag of large noodle pasta like ziti (I used Penne Zitoni)
  • 1lb of ground beef (about)
  • 1 pkg/envelope of taco seasoning
  • 1C water
  • 1/2 pkg of cream cheese (about 4oz)
  • 1 1/2 C shredded cheese (I used a mix)

Directions:

Boil pasta until just cooked, drain, run cold water over it. Brown ground beef, mix together taco season and water, Pour over cooked beef and let simmer for about 5 minutes until the liquid has reduced. Add the cream cheese to the beef mixture, stir until melted and combined, remove from heat. Put pasta in your casserole dish mix in 1 cup of the shredded cheese )I did a heaping cup because I like cheese). Top pasta and cheese with beef mixture, gently mix until the pasta is coated. Top with remaining 1/2 cup of shredded cheese (I did not measure top cheese just sprinkled until top was covered). Bake at 350 uncovered for approx 30 minutes.

This is great, and for our family of two made plenty of left overs!
